The Precious Food of French-Japenese Duo Balboste

The story of Balboste started with the friendship between Charlotte Sitbon and Sayaka Kaneko. Charlotte is an ex graphic designer, inspired by jewelry. She has a strong eye to create a unique aesthetic and puts attention to refinement and details. Sayaka is bringing the authenticity and simplicity of Japanese culture while exploring new ways to enhance the taste of traditional dishes.

Together they want to create tailor-made culinary and multi-sensory experiences. Caterer for private and public events, they design food that you can’t stop looking at !

For their first event in France, the skincare brand La Mer chose the duo to elaborate nine precious food pieces. Inspired by the aquatic world and its ecosystem, they played with mineral look-alike textures or transparency. The result is a sponge bite almond/pistachio, mini lilac and blue mochis that taste like apple-jasmin or little rock bites with a praline heart.

Next, they brought their best seller, the edible crystals to Chanel Haute Joaillerie.

For a series of events at their Place Vendome store location, Balboste imagined a whole delicate experience that recount Chanel history. They worked on embroidered menus, paper flower art, signature cocktails or some rolls which texture evokes the Coco Crush ring. Their iconic edible crystals are sculpted by hand.

They come from a traditional Japanese cake made for the tea ceremony. Here, they are improved by adding essential oils. To create those unique atmospheres, Balboste also collaborates with designers, paper artist or ceramists.

As they are growing faster, Balboste will open an hybride space in Paris (10e?me arrondissement) where they will sell some of their best sellers as well as teach classes in their workshop.Rendez-vous in May 2020 !
